Vinification
Grapes harvesting in September, vinification by soft pressing of the grapes, cold settling, fermentation in stainless steel tank and aging in oak barrels from Allier (30 hl) for 18 months. In-bottle refinement for at least 6 months.
Service temperature: 12-13°C (53-55°F)

Tasting notes
Color: pale yellow with good intensity, quite intense and clear
Aroma: complex, excellent finesse
Description: floral (wildflowers, chamomile, acacia, light honey), fuity (peach, apple), spicy (light cinnamon, vanilla, with a final "fumè" note), herbaceous (delicate mint, aromatic herbs and fresh hay)

Taste: good freshness and softness, sapid, quite warm. Well balanced, excellent intensity and persistence

Pairings: excellent with hot and cold seafood appetizers (with or without tomato), with a preference for carpaccio and tartare of tuna, swordfish or shrimp. It goes well with pasta stuffed with monkfish and herbs or else crepe stuffed with salted coldfish with roasted tomatoes and olives. In the end it can be concluded with a baked turbot with potatoes, thyme and marjoram. The wine also combines well with a white meat menù with mushrooms or truffles.

Pairings: seafood appetizers (with or without tomato). It combines well with first courses with fish or vegetables or delicate white meat. The wine also matches with fried fish or cured meats not too tasty and spicy

Colour: Dense Ruby red with garnet glints.

Vinification: Harvested in October, gentle grape pressing, maceration and fermentation for about 7/15 days in stainless steel tanks, with hand punching down. Once the malolactic fermentation is over, the wine is poured in 10 hl barrels of Slavonian oak where it settles for 15/20 months. Racking and bottling without filtering. Fining in bottle for 6 months or more.

Bottle lifespan: on sale after 3 years after the Harvest, bottle ageing for a further 8 years.

Food matches: Grilled Red meats, game, truffle and mature cheeses.Perfect with Fillet steak with black truffle.
